Jamie’s 30 Minute Meals

I absolutely love this series! Jamie Oliver cooks really fantastic but simple food, but they’ve removed lots of the recipes of the website and now I’m going to have to go out and actually buy the book!

There was one recipe which I was going to share with you today that I had saved and was desperate to try.

It was a different take on chicken skewers. Obviously I’m a vegetarian, but only me and my mum are in my family so I thought I would cook chicken for everyone else and king prawns for us. (This is what we usually do and everyone decides they would much rather eat king prawns.)

My favourite thing about his 30 minute meals are the salads and sides.

And aha! I’m a genius here is the full recipe http://www.channel4.com/4food/recipes/chefs/jamie-oliver/chicken-skewers-and-fruit-and-mint-sugar-meal including noodle salad and desert!

Work today

I have to leave for work in a couple of hours.

I work in a local garden centre (I know, the glamorous life of a journalist). I started there 3 years ago and I’ve quit twice but keep coming back.

I really cannot wait to have a proper, full time journalist job.

Lunch Time – A Tasty Alternative!

I have been wanting to make this for a while. I’m not really a massive fan of pizza, I prefer something lighter. I can also be quite funny about warm food on a warm day. Therefore, this is perfect for me – plus I had all the ingredients already in my kitchen!

These are lovely, healthy, tasty and quick! I haven’t thought of a name yet but I’m hoping by the end of this post I’ll have thought of one…

Ingredients

  • 2 slices of bread
  • 1 mozzarella ball
  • 2 small tomatoes

That is all you will need for the variation I’m making today! But of course, like a normal pizza, you can put almost anything on it.

And this is just how simple it is…

1) Toast bread

2) While you bread is toasting, slice mozzarella and tomatoes. And switch on the grill.

3) Once your toast pops, put the topping on and slide it under the grill.

4) Watch it for a couple of minutes until it is grilled to how you like it (as you can see I like mine so the cheese is all melted on the outside but not on the inside but my tomatoes are all lovely and soft)

5) Eat 🙂

Next time I think it will need… basil or capers or anchovies. This was very mild, next time high flavour! Maybe even something a bit spicier!

Appetisers

Just came across this lovely simple recipe on PB&Jargon!

I keep thinking about how I want to have a party and I think these with olives and other nibbly bits would be lovely.

Maxi Dress Search

I’ve been in the look-out for a maxi dress for a while now. I can never find one that I think will look flattering on me.

Mainly because I’m quite short. Therefore anything that comes to a models ankles will touch the floor on me.

However, I just saw this dress by Winter Kate and it’s gorgeous. As well as lovely and floaty which is just what I wanted. And the best thing is I have a pair of heels AND a pair of gladiators which would look amazing with it.

However it has a hefty price tag of £385. It’s a good job summer is a while off and I’ll have a while to save (or wait for it to go on sale)!

If you want to find it it’s on ASOS along with lots of other Winter Kate stuff. http://www.asos.com/Winter-Kate/Winter-Kate-Maxi-Dress-In-Floral-Print-With-Beaded-Bodice/Prod/pgeproduct.aspx?iid=1373269&cid=8799&sh=0&pge=4&pgesize=200&sort=-1&clr=Vanilla

Well done Joy the Baker http://www.joythebaker.com/blog/2011/03/cinnamon-sugar-pull-apart-bread/#more-4771

I love cinnamon, I love bread, I love this.

Time to go out and buy some yeast I think.

If you have any ideas for variations I’d love to hear!

Alice in Wonderland Cupcakes

I just saw someone else had posted some ice-cream cupcakes so I thought I’d show you a selection of cupcakes me and my sister made for an Alice in Wonderland party two years ago.

These, obviously, aren’t very Alice but we wanted lots of weird and wonderful food. Ice-cream cupcakes are so easy to make and people are always impressed!

The ones in the picture are simply basic cake mix, about half fill each cone. Then a good dollop of butter cream topped with sprinkles!

I think if i was going to make them again I would definitely put some treats in the cone i.e chocolate or marshmallows! Because it would melt it would certainly make a great surprise. We found these were deceptively large! And plain cake and cone can be very boring…

We also made our own lemonade and used drink me labels, bought lots of brightly coloured sweets and made a rabbit shaped jelly (which soon became vodka jelly once my friends got hold of it).

As well as these cute little cupcakes…
